JOB SUMMARY

Salary Range: $80,000 - $85,000

We have an exciting opportunity for a full-time Executive Sous Chef in our Dining and Nutrition Services department.  As a member of Food Services management staff, Executive Sous Chef works in conjunction with the campus Executive Chef. Assumes supervisory responsibilities of the daily operations in Longview, Christian Health’s North Jersey’s premier assisted living residence.  Responsible for training and development of all staff. Completes catering of VIP Functions and staff dining when necessary. Responsible for overseeing the preparation of all foods in Longview. Constantly striving to improve food and service. Responsible for maintaining high standards of quality food production, sanitation, and portion control using standardized recipes. Responsible for using appropriate quantities of food needed to meet menu requirements. Utilizes pre-preparation and batch cooking techniques. Responsible for creating the cycle menu in Longview. Responsible for scheduling of all kitchen staff. Competencies:

  • Ensures sanitation of all food service equipment as it relates to: 
    • Food temperatures. 
    • Proper cooking and cooling techniques. 
    • Cutting board usage. 
    • Cleanliness of cooking conditions.
    • Provides training and development of other production personnel.
  • Estimates food requirements and controls serving portions eliminating waste and leftovers.
  • Cooks a variety of foods following standardized recipes and methods of preparation. 
  • Responsible for creating cycle menu's. Must be approved by Executive Chef. 
  • Prepares the breakfast and noon meal. 
  • Schedules food preparation so that all items are prepared in small batches continuously throughout the serving period. 
  • Supervises hot/cold production personnel. 
  • Requisitions food and supplies for daily needs. 
  • Responsible for catering events at Longview with catering for VIP functions and employee dining as necessary. 
  • Functions as Food Service Supervisor, assuming for full responsibility of this position, as need requires. 

Schedule: Full time, 7am-3pm, Monday - Friday & Every other weekend.

 

Education: High school diploma or equivalent. Secondary education in cooking/food preparation required.

QUALIFICATIONS/REQUIREMENTS

Demonstrates compliance with the CH ASPIRE Standards of Performance.

 

Qualifications:

  • 5 years experience in a supervisory role preferred.
  • Certification in food services sanitation (ServSafe) required.
  • Must be able to cook a variety of foods in large quantities ensuring optimal quality at point of service.
  • Must be able to cook ala carte style.
  • Must be able to follow recipes.
  • Must maintain care and use of supplies and equipment.
  • Follows all industry and regulatory agency procedures and requirements.
